Tortilla Chips

This is an ideal way to use up leftover tortilla wraps, or wraps that have started to dry out.

Ingredients

Tortilla wraps

Olive oil

Salt

Flavouring (e.g., ground garlic, onion powder, ground herbs, etc.)

Method

Pre-heat the oven to gas mark 5/190°C/375°F. Pour the olive oil into a bowl, add the salt and chosen flavourings and stir well. Using a pastry brush, lightly coat both sides of each tortilla wrap with the flavoured oil. Cut each wrap into 8 wedges (a pizza cutter is ideal for this), and place in a single layer on a baking sheet. Place in the oven for 8-10 minutes. Serve warm, or transfer to a wire rack and allow to cool. Use kitchen paper to remove excess oil if necessary.

(In the picture above, the dip is made of natural yoghurt, dried parsley, and a little dried tarragon.)

This recipe will feature in a book I still in the process of writing. While you're waiting, you might like to check out "Make your own Ingredients" where you can learn how to make your own tortilla wraps.
