Golden Oat Bars
Ingredients
A 9oz (250g) block butter
4oz (100g) sugar
2 generous tablespoons golden syrup
8oz (225g) self raising flour
8oz (225g) rolled oats
1 teaspoon salt
Method
Preheat the oven to gas mark 4/180°C/350°F. Place the butter, sugar and syrup in a saucepan and bring gently to the boil, stirring often, until the sugar has melted, then remove from the heat and allow to cool for a minute or two. Meanwhile, put the flour, oats and salt into a large bowl and mix together. Make a well in the centre and into this pour in the contents of the pan. Mix well and then turn into the oven dish, pushing the mixture down and into the corners of the dish. Bake for about 30-35 minutes until golden brown. Remove from the oven and use a sharp knife to cut into individual pieces whilst still hot. Leave to cool in the tin before removing.
Variations
Black treacle instead of golden syrup,
Brown sugar instead of white,
Dried fruit – add a handful to the dry ingredients,
Nuts – add 1-2 tablespoons of chopped nuts to the dry ingredients,
Seeds – add approximately 1 tablespoon of seeds to the dry ingredients,
Chocolate coated – trickle or spoon melted chocolate over the cold bars and leave to set.
